RSVP IS OPERATED by Chef Guy Birster and co-owner Charles Cilona, who live in West Cornwall, just yards from their restaurant. The intimate 20-seat restaurant is a two-man operation. Guy handles the cuisine; Charles greets and serves the guests.
RSVP’s food is rated 29 out of a possible 30 in the Zagat Guide. NY Times “Dining & Wine” writer Marian Burros says “Guy Birster, a native of France, and his partner, Charles Cilona, have managed to produce some of the most brilliant but simple country French food this side of the Atlantic, in a setting that recreates a small family village restaurant.”
CHEF GUY BIRSTER was born and raised in Burgundy, France. He began his culinary training at the age of 14, serving as an apprentice. From there, he took on sequential roles throughout Europe — comis, chef de partie, sous chef, and finally chef de cuisine.
When Guy met Charles in Los Angeles, it became apparent the couple had complimentary restauranteur skills. Together, they opened bistro and quickly saw success. Soon, a second bistro followed.
In 2001, Charles and Guy realized their dream of a special concept restaurant — a bistro so small it would require just the two of them. With a pre-selected five-course meal and a limited number of accommodated guests, the fine dining experience of RSVP enables Charles and Guy to be a two-man show.
